Crispy Garlic Chickpeas

Summer is in full swing here in Rhode Island, which gets me so excited for cooking. Sometimes I feel like the winter, while cozy and comforting, can get boring in the kitchen - produce isn't as vibrant, a lot of crockpot meals and soups, whereas the summer is just so much more fun. I definitely crave different things depending on the season, and summer is no different.


I start wanting salads on the time - all the veggies. Sometimes roasted, some grilled, some fresh. Different dressings, or various proteins, some more savory and some more sweet. That's where these crunchy garlic chickpeas come into play.

I've talked a lot about how great chickpeas are (think about these PB Oatmeal Chocolate Chip Cookies) but not about why they're so great. Aside from being a versatile baking ingredient, they are packed with nutrients. From that fiber and protein, they also can help to keep you more full for longer (unless you go back for seconds!!) But overall, they're so easy to add to any recipe and are (my favorite) so crazy cheap. I mean, honestly, a can is less than a dollar. So while I do bake with them quite frequently, I love adding them to a salad for all of these reasons.


I got to thinking, however, the other day, that perhaps I should do more than just take them out of the can. Why not crisp them up a little? And then I realized I had FarmTrue's Garlic Scape Ghee in my pantry and knew that they'd be a perfect match.

When I tell you this may be the fastest, and easiest recipe I have on my blog, I'm not joking. Open a can of chickpeas and give a good rinse. Over medium to high heat, scoop some garlic scape ghee (or butter) and let melt and begin to bubble. When pan is hot, throw in chickpeas and season with a little salt and pepper to taste. Keep them moving and rotating around the pan for about 5 minutes until they begin to crisp and become golden brown. Serve immediately on top of a salad or even just as a quick snack.

Crispy Garlic Chickpeas (GF)

Prep Time: 3 minutes

Cook Time: 5 minutes


Ingredients

  • 1 can chickpeas, rinsed and drained

  • 1-2 tablespoons FarmTrue Garlic Scape Ghee (or butter/vegan butter substitute)

  • Salt and pepper to taste

Directions

  1. Open can of chickpeas, drain and rinse thoroughly.

  2. In a saute pan over medium to high heat, add ghee and allow to melt and begin to bubble.

  3. Add in chickpeas when pan is hot, season with salt and pepper to taste.

  4. Rotate around pan and allow to crisp and become golden brown - about 5 minutes.

  5. Serve hot over a salad or on the side as a snack.
